I know why I’m not a baker because you need to be EXACT with everything you do. That just doesn’t necessarily suit my personality. I don’t love to read directions and I’m not a fan of recipes that don’t have really good photos because I need to know what my dish should look like when it’s done. It may never look as good as the photo but at least it gives me hope… so so I tell myself.
Maybe it’s all these beautiful foodie blogs I keep running across but boy is food photography beautiful these days. Even though I don’t love to cook – I do love to look and eat beautiful food.
Since Keith and I are vegetarians (vegan on and off here and there – but currently eating no dairy, eggs, etc.- trying to eat as clean and plant based as possible) I am always looking for easy ideas for our lunch. In my opinion there is nothing easier than soup. Yes you have to peel and chop but for the most part as long as you have a vegetable in your fridge you are good to go.
Lately, I haven’t really been interested in recipes either. I just throw in what I feel. Keith hates the taste of most vegetables so I need to be a little thoughtful as to what my combos are but it usually works itself out. One of my go to favorites is carrot ginger soup. Today’s variation, add apples.
So literally my soup is this easy:
1/2 onion (chopped and added to the olive oil, sauteed till clear)
1 lb carrots (peeled and chopped)
1 inch piece of ginger, chopped
2 red apples
6 cups of water
salt and pepper to taste, dash of seeds on top
Cook until carrots are tender, pour in the Vitamix and blend away. Done. And so so good I had to take a picture of it! The best part is there is some leftover for tomorrow!
